Fatty Acid Composition
The main polyunsaturated fatty acids in the oil are linoleic acid (56.8%), alpha-linolenic acid (15.7%), and monounsaturated oleic acid (12.3%) (see chart). Their total content reaches 85%. The content of palmitic acid is about 6%, stearic acid is 2.7%, and gamma-linolenic acid is 3.3%. These six acids make up 97% of the triacylglycerols in the seed oil.
Omega-9 fatty acids are primarily represented by oleic acid, which makes up about 12%. The content of gondoic acid is almost 27 times less. Omega-6 fatty acids are mainly represented by linoleic acid (56.259%) and gamma-linolenic acid (3.308%). Trace amounts of arachidonic acid (0.011%) are also present.
